No Substitute SuperTool
Not wanting to be 'conned' into buying one of these babies from a cookery class, it was a while before I took the plunge. MADNESS ! I should have bought at the time -what a superb knife. Light but with great balance, it is easily long enough to tackle say, a large Sea Bass and allows good feel of the blade as it flexes. It is the biz for fine dicing and produces paper-thin slices of ginger, garlic, chilli, veg.juliennes. Forget de-skinning tomatoes by blanching. Just eighth them and fillet. Childsplay. Keep it sharp and it rewards every time. I'd recommend the two-wheel Global ceramic sharpener, designed for the finer blade-angles, as the knife's flexible nature is really tricky to sharpen on a traditional ceramic block without lots of practice. I'm now using the Mino-guides to better effect these days.
