Synopsis
Following the success of "The French Kitchen", Joanne Harris and Fran Warde have collaborated once more to write a French cookbook with a difference. This time they have taken their inspiration from the rural markets of Gascony. Tomatoes as nature intended them to be - large, misshapen and bursting with taste - sun-ripened melons, locally produced foie gras, air-dried goat's cheeses rolled in herbs, organic honey, persimmons and floc (a uniquely addictive combination of freshly pressed grape juice and aged Armagnac), all form the basis of a deliciously simple collection of recipes that recapture all the sensations and flavours of summertime. Traditional dishes like cassoulet, beef bourguignon and creme caramel, as well as creative reinterpretations of old favourites - chilli duck with orange salad and wild mushroom tartlets - all combine to make "The French Market" a recipe for success.

Customer Reviews
Authentic French Cuisine at its Best
254 pages of high quality semi-shiny pages with superb
full-colour photography throughout.
Split over five chapters, with informative passages heading
each:-
Soups & Savouries
Salads & Vegetables
Fish
Meat, Game & Poultry
Desserts
finished with a comprehensive index, an alphabetical list of
recipes and conversion tables.
I was really impressed with the fish chapter of this imaginative book.
Particular favourites:-
Bouquet au Citron
Atlantic Prawns with Lemon/Lime -(taking a mere five minutes to prepare and five minutes to cook!)
Daurade au Vin Blanc
John Dory in White Wine and Asparagus
Maquereau a la Dijonnais
Mackerel with Leeks and Dijon Mustard
Special mention to:-
'Flétan a La Bordelaise' - Halibut in Red Bordeaux Wine.
This is an unusual way of cooking fish, full of depth and
flavour. Other varieties of fish can be used, such as salmon,
brill and cod but halibut works perfectly, gently simmered in
herbs and wine.
Old favourites also worthy of a mention are:-
Boeuf Bourguignon
Canard a L'orange
Creme Caramel
Croissants
Paté de Foie
Tarte Belle Hélene
The French Market
Wow! What a beautiful book. The photography is fabulous and the recipes look pretty straight forward. I was transported to a sunny French market on Christmas morning and didn't want to leave!
Highly recommended
