Hurray for Hugh and Ray !!5
A superb DVD which we all thoroughly enjoyed. Hugh and Ray literally show you how to joint a pig and process the offal. They explain the cuts, the equipment needed (knifes etc) and even use the offal. Theyre is also a section for recipes on the DVD, Ray's pate is an absolute must, it's superb. It hasn't made me rush out and buy half a pig just yet but it certainly inspired me to try my hand at making sausages (I bought a mincer etc !!) and I intend to try air dried Prosciutto ham next. I can't wait....

A majority of people will never want to see where their meat comes from and just what it involves...alas I'm not one of them!

Its so easy to go and buy from the local store a pack of Bacon, open it and place it it the fry-pan and listen to the sizzle...

Whilst that still me, I'm more selective of where it comes from and knowing that my meat is from an animal that is well treated in its life before it hits my plate is something i've come to believe in as time goes on...

I don't know if i'll be able to get somewhere to be somewhat at a self-sufficient stage with my own food (meat & veg) but until then I'm prepared to shop at places where I know its from a good source...

This DVD - Hugh and his 'Meat Mentor' Ray takes you through the various stages of preparing the pork into joints, chops, and the rest for items such as sausage, salami, haggis and more.

Ray is a real butcher, he talks about his tools of the trade, his own favourite bits of the pig...its not all slice, saw or chop and tie up with string...there's humour and more importantly a showing of dedication to using all of the animal and not just the choice bits we may just enter our own butchers shop for...

Even if you never want to get a hands-on approach to doing all in this DVD, you'll gain an insight of what more you can do in your own kitchen than frying sausages, bacon and a pork chop...Recommended viewing...
