For the price - superb
I haven't been to Africa but wanted a simple book which was cheap, hopefully with some Tagine recipes too. This book fills that role.
The first tweleve pages are a bit about the culinary traditions, equipment, flavours and wines. Just enough to give you an insight.
Then you get into the main sections. These are nicely split into chapters for each different kind of food such as starters, salads, fish, poultry, meat and vegetables. The final chapters are desserts, spice mixes and drinks. Most of the dishes are very simple to make. All the herbs and spices are all readily available in your local supermarket.
The presentation of the book is excellent, with full page pictures of the dish. There's also lots of pictures of African sights to get you in the mood.
The text size is fairly small so if your eye sight is not too good then bear that in mind. At this price though, it's not going to break the bank!
Overall I'm very impressed and have made several delicious dishes to wow my friends. If you've been to North Africa and want to recreate those memories try this book.
NORTH AFRICAN COOKING: EXOTIC DELIGHTS FROM MOROCCO etc
Having just returned from Morocco I was searching for cook books to buy in order to try out some of the wonderful food we had there. I settled on this book and Hamlyn's "The Moroccan Collection" Luckily both books have proved excellent but I was amazed at the high quality of presentation in "North African Cooking" considering its very modest price. I found all the recipes I had hoped for in the Moroccan section. These were so delicious it tempted us to try ones from the other North African Countries. The flavoursome ingredients enhanced by the subtle blend of spices have provided several stunning meals which have been appreciated by our guests at dinner parties. Several have become family favourites. We are foreign food fanatics and the regions covered by this book certainly have provided us with many new ideas in the kitchen.
I don't know what to think about that book :???:
As a native moroccan I was looking for the real stuff, some kind of "Paula Wolfert Cookbook" but with some photos to look at,(the editions I have of P. Wolfert are not illustrated at all) but this book of Hilaire Walden is a little bit of everything, a bit of real authentic moroccan recipes , a bit of "occidentalised morrocan food" and a bit of the author own "inspiration" probably ;
I don't know what to think about it, but one think I know is that I don't find in it what I expect from a moroccan cookbook. (though his lemons preserved recipes is very very good, and so the chicken with olives)
I think -at least to my knowledge-that among foreign writers who wrote about moroccan food, only Paula Wolfert has given out the most accurate type of book that a non-native could OFFER. She did it with a lot of love and a passion that "forces" the respect, some did it before her, but I think only Mrs Wolfert had this "great" little something that makes her and her cookbooks unique.
