What is it?
A Knife Sharpener not a knife grinder and so will not damage the knife. It was developed for and is still used in the meat processing industry.
How does it work?
At the heart of the machine are 2 small butchers' steels, the same hardness, temper and cut as a professional steel. The steels are pre-set at the optimum edge angle and are spring loaded so as not to damage the knife. The steels revolve under tension and do not wear away the blade. To sharpen any knives just run the blade between the steels four or five times as if slicing bread. The base has holes which allow the sharpener to be secured to a surface for even safer sharpening and to ensure it's easy to find in a busy kitchen.
Will it sharpen any knife?
Yes, Plain, Serrated or Scalloped edged, carbon or stainless steel. Really blunt knives may require a more vigorous action.
Who designed the Classic?
Robert Welch. The classic is found on permanent exhibition in New York Museum of Modern Art as a sixties design classic.

The easiest and best
This little gadget is indispensable. I have owned one of these for 12 years. It is very simple to use. No "knack" is necessary, as is needed with a traditional butcher's steel. I hope you buy one and enjoy using it!
Works well much of the time - UPDATE JULY 08
Below is my original review. I just wanted to add that since then we have bought a Chef's Choice electric sharpener and, well, it blows these manual machines away. Really. They are not cheap but I wish I'd plumped for one years ago rather than keep trying different manual sharpeners. Anyhow here is my original review:
We have been through so many types of knife sharpener over the years in our attempt to own truly sharp kitchen knives. The latest has been a ceramic "steel". The Chantry Classic sharpener has, I suppose, stood the test of time but we have bought others since owning this which clearly suggests that it could be better: the fact is that it sharpens many knives quite well, and some knives exceptionally well. It's difficult to know why it is variable in its effect, and I can only guess that it's to do with the knife blade itself.
I wish there were a 100% guaranteed knife sharpener that produced a razor edge, but I'm beginning to think such a thing does not exist. All-in-all this one has to be highly recommended: easy to use and mostly effective.

I bought one of these based on another buyers recommendation and I have to say it really does do what it says on the box. This is fantastic. I am hopeless at sharpening knives so I was desperate to get a decent sharpener as I was fed up with struggling everytime I started to prepare veg and stuff with blunt knives. All of my knives are razor sharp now. You can get spares, it uses two steels not a stone which never works properly. Buy this, you won't be disappointed.
