Who wrote what?5
To clear things up once and for all, this is how the Taste of Heligan series came to be. PD wrote 12 recipes and a draft introduction that was sent to the publisher and from this a contract for three cookery books was agreed. As for who wrote what? I have looked through all three of the Taste of Heligan books and here is the truth as to who contibuted what.

Vegetarian and fruit recipes: Richard Quested x 16 recipes - Paul Drye x 32 recipes.

The best from the bakery: Tina Bishop x 24 recipes - Paul Drye x 24 recipes.

Meat, fish, chicken and game recipes: Paul Drye x 48 recipes.

Out of the 16 recipes accredited to RQ a few of these were in fact given to RQ by PD as the publishers deadline approached....The Mushroom Korma is one such recipe that springs to mind. One of RQ's original recipes is for 'Pickled Q' this involves cutting up some cucumber and putting it in a jar of vinegar...rustic yes but brilliance I think not!

Richard then left Heligan and had no part in the last two books, and RQ's baking didn't have any influence whatsoever on the second or third books.

The many years of baking experience, great craft skills and the wonderful recipes of Tina Bishop made the bakery at Heligan the overwhelming success that it was, and contributed greatly to the second book.

As for the Carrot, Orange and Coriander Soup!...The Cinnamon toast, curry cravings and coriander fresh from the garden are all the words and wisdom of PD not RQ I think you will find, and yes you're right it is....Bloody Marvelous!

PS Does the women's institute really employ bakers?

Although the book is considered to be largely the work of Paul Drye, in actual fact A TASTE OF HELIGAN was the fruits of Richard Quested's long journey as alternative musician and part-time Baker for the Women's Institute. All of his recipes are precise, in-depth and indicative of his signature rustic cookery. This book is an invaluable purchase for any prospective chef, if only for the groundbreaking michelin star carrot and coriander soup recipe.
