Just to whet your appetite, here's a sample recipe. If you don't care for very spicy food, you might want to reduce the amount of crushed red pepper to 1/4 teaspoon. But for full flavor, use the whole teaspoon.

Steak Marinated in Beer and Green Onions

Serves 8

2 pounds boneless top sirloin steak, all visible fat removed

MARINADE

1 1/2 cups light beer (regular or nonalcoholic) (12 ounces)

4 green onions, minced

2 tablespoons light brown sugar

2 tablespoons dry sherry

1 tablespoon grated fresh gingerroot

1 tablespoon light soy sauce

2 medium cloves garlic, minced, or 1 teaspoon bottled minced garlic

1/4 to 1 teaspoon crushed red pepper flakes

1 teaspoon acceptable vegetable oil

Dash of red hot-pepper oil

Put steak in an airtight plastic bag.

In a medium bowl, combine marinade ingredients. Pour over steak and turn to coat evenly. Seal and refrigerate for 1 to 24 hours, turning occasionally.

Preheat grill on medium-high.

Drain steak, then grill for 8 to 12 minutes per side, or until desired doneness.
