Quick, easy and effective!
I've been using one of these sharpeners for a couple of months. I did an initial blitz and sharpened all my old knives when I first got it. Since then, I've been resharpening the knives I use regularly every other time I use them (or when I remember!). I've found this device to be very effective! It quickly revives old dull blades and it keeps them sharp over time with minimal effort.
The design is easy to use. I give each knife about 10 strokes through groove 1, and then 10 more through groove 2. That's all they need if done fairly regularly. It's important not to press down at all when sharpening - just let the weight of the blade hold it in the groove. It's also important to hold the blade at the right angle so it rubs against the two guide rollers (so you know it's working the blade at the right angle). If you follow these two simple rules, you can't go wrong.
I've also successfully used groove 2 to restore an oldish serrated bread knife to its former glory.
Overall, I'm very happy. I don't see the need to invest £100 in an electric sharpener since this works really well with minimal effort. If you don't want to learn how to use an old-school sharpening steel, this comes highly recommended.
Excellent - does exactly what is says on the box !
I must say I was a little concerned about buying this after seeing the other reviews, so I did a lot more research on the 'net. Chef's Choice (Edgecraft) are by far the biggest supplier of knife sharpening equipment in the world, their products are available everywhere, I don't think they would have remained in business if their products didn't work.
I used to sharpen all my knives with a specialist Lansky Sharpening system, which took ages. This gets all my kitchen knives razor sharp in seconds! Even old really blunt knives take 50 strokes in slot 1 and then another 20 in slot 2 to get them back into shape.
I can only assume that the other reveiwer had a faulty one.
Very very easy to use, ultra quick, ultra sharp - Highly recommended.
Great bit of kit!
I know this sharpener has mixed reviews but I have to say that I love it! I could not believe the difference it made to the edge of one of my oldest knives. I would argue now that it is sharper than the day I purchased it. Great product. Get one!
