A nice Italian cookbook, very easy stuff. No pictures which might bother some although it really doesn't matter. There are so many Italian books around but this feels authentic.

Again on loads of lists. Its not all veggie but maye 50% is. Fantastisc book, a mix of Southern Spain, North African influences. Always impresses guests and it's easy stuff really.
