I am a professional builder of unusual and unique instruments, largely because I discovered this book where every turn of the page brought an "ooh", "Oh Yeah!" or "At last". If you are interested in geting up and running in the field of DIY acoustic instrument building for fun or for business then Bart Hopkins Musical Instrument Design MUST be the cornerstone of your library.
A previous review said that there's not sufficient technical detail but I disagree, there is plenty of technical information, most certainly enough for you to get a handle in the basics of building pretty much every type of instrument. OK so it's not a physics textbook but there are plenty of those, this is a superbly well written and accessible publication
If you want to add to specific technical detail at your disposal (mostly in terms of physics) then you will probably need a book per instrument
