Synopsis
Because of our acid-producing diets, environmental pollution, antibiotics, excess oestrogen in the environment, and personal and world stress, candida and fungal infections are rampant today. Rainbow Green Cuisine, containing an incredible assortment of over 250 delicious recipes, presents the first sophisticated, gourmet international cuisine to be based on highly edible natural organic live food, along with a relatively low-sugar and low-mycotoxic approach.

Rainbow Green Live-Food Cuisine
Like a lot of people, I am gradually coming to the realization that what I put into my body affects the way my mind and body are able to function. Not all food is created equal and counting calories or carbs does very little good if I'm not giving my body the nutrition it needs. Slowly, I am learning that my body, mind, and spirit prefer whole foods to fast food and empty calories.
Rainbow Green Live- Food Cuisine introduces the concept of live-food. This plan is strictly vegan and promotes the usage of fresh raw foods whenever possible. For most people, these recipes will be a radical change from what they eat at present. Nonetheless, they will provide a place to start.
I had a few personal challenges while trying these recipes. A large portion of the foods contained coconut, which I am allergic to, so I had to make some adjustments. Moreover, many of the dishes contained ingredients that were unavailable in my area, so I again had to make substitutions.
Bit of a Bible
This is an astonishing book. There are two main parts. The first part is dense science about how food affects the body with interesting photos illustrating his points. This part is well explained, if a little overwhelming. I've approached it several times. I think that it takes an amount of re-thinking to take in the points. No bad thing. It's a compelling point of view.
However, you do not need to read the first part in order to follow the recipes. If you are new to the concept of vegan, raw food eating, then you may be surprised that there are ways to make 'breads' and 'mylks' (milk made from nuts, for example). The recipes may inspire you to consider purchasing a de-hydrator. You may be interested to know that 'raw' does not necessarily mean 'cold' - it's all to do with the temperature you 'cook' it at. Also, lots of soups, dips, patties, salads and puds. It's true that many of the ingredients can be hard to source. It would be worthwhile to try one recipe a week, say. It's a lot to take in, at least for me.
The food is really delicious! It really surprised me that one can eat so well, raw and vegan. This book is a real eye-opener. It was my first book on raw food recipes and it rocked my world.
