Lilian's Rich Tiramisu Serves 8

Still popular with coffee addicts, although lilian's always rather too generous with the brandy.

- 10fl oz (1/2pt/300ml) strong black coffee
- 2tbsp coffee liquer or brandy
- 24 boudoir sponge finger biscuits
- 3 medium sized eggs, seperated
- 3tbsp caster sugar
- 2 x 9oz (250g) cartons mascarpone cheese
- a little cocoa powder

Mix the coffee and liquer together. immerse the sponge fingers in the mixture one at a time, then line the bottom of the glass trifle bowl with half of them.

whisk or beat the egg yolks with the sugar until pale and thick. Add the mascarpone gradually until the mixture is evenly blended.

Whisk the egg whites until they stand in stiff peaks then fold into the mascarpone mixture.

Spread half the mixture over the sponge fingers in the trifle bowl, then add another layer of coffee soaked sponge fingers and spread the remaining mascarpone on top.

Decorate liberally with sifted cocoa powder and chill overnight, or for at least 6 hours. Serve chilled.

Angela Piper has played Jennfier Aldridge in The Archers for over 40 years. Here she brings together her love and knowledge of the radio show with her skill in the kitchen. This book is a kind of journal written by Angela Piper, who plays Jennifer Aldridge (nee Archer) that follows the seasons and the months in Ambridge, combined with contributed recipes from other characters in the Archers. Designed to look like an old journal on the inside, it features recipes on scraps of paper, photos and paintings. Forty five lovely, fresh watercolours, too. Very well priced for a hard cover book, and makes an ideal present for any Archers fan; ex-pats living abroad; keen cooks, or anyone who loves the British countryside.
