Excellent Indian Cookbook for beginners !
This book is heavensent for lovers of Indian food! It is complete and practical. In reviewing Indian cookbooks one is often left with the impression that a surprisingly high number of these recipes are flawed - some too wordy ("my grandmother in Lucknow..."), some too brief ("bhoonaoed three or four times..."), and others are plain inaccurate ("the chota maharajah preferred almond oil over ghee from Benares ..."). Many times it is suspected these recipes had never been kitchen tested. Printing corrections does little to placate the cook who wasted time, money and ingredients. The recipe has to right the first time. One could scarcely believe the condition of these recipes: ingredients out of order or missing, no can or pan sizes, no yields, vague instructions, no oven temperatures or cooking times, no description of mise en place, pots and pans or the utensils needed. It would be appreciated if Indian cookbook writers wrote with accuracy, consistency and ease of understanding rather than personal vanity or frippery. A good cookbook should be a one-stop source of information that could be used by anyone who enjoys good food and wants to cook.
